This one’s perfect for summertime when Laura says she avoids turning on the stove if she can help it. “The stove heats up the whole house! That’s why most nights you’ll probably find me grilling.”
Ingredients
Ingredients for Pork Chops & Rosemary Peaches
- 2-3 lbs pork loin chops, bone-in
- 1 bunch fresh garlic scapes (about 20)
- 1 tsp olive oil
- ½ tsp sea salt
- 4 peaches, fresh
- ¼ cup brown butter ghee
- 2 sprigs fresh rosemary
- Lemon juice, optional
Ingredients for Marinade
- 3 Tbsp apple cider vinegar
- ¼ cup extra virgin olive oil
- 1 tsp mustard
- 6-8 fresh rosemary leaves, chopped
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp thyme
- ¼ tsp garlic powder

Instructions
- Combine all marinade ingredients in a bowl and whisk together. When done, pour over the pork loin chops, turning as necessary to coat. Cover and marinade for several hours, up to one day. The longer, the better!
- Preheat the grill to 350°F.
- Carefully place the pork chops. Grill until 145°F in the center. For a 1-inch thickness, you’ll probably want about 5–6 minutes on either side. Set them aside when finished.
- Lower the heat to 275–300°F and heat brown butter ghee in a cast iron skillet with the fresh rosemary. Slice and pit each peach, and lay them facedown in the melted ghee.
- Allow the peace slices to cook for about 8 minutes, or until nicely browning. Flip, then cook for an additional 3-4 minutes so they’re softened through, but not mushy.
- Toss the garlic scapes in the oil and sea salt. Grill them for about 3 minutes per side, until browning and beginning to char. Set aside and toss with a little extra salt to taste and — if you’d like some zest — a squeeze of lemon juice.
- Plate together. Pour any extra ghee over the pork chops, and enjoy!
